Roasted Lemon Chicken

Ingredients:
2-3 pounds bone-in chicken
Juice of 2 lemons (or 1/3 cup lemon juice)
¼ cup Olive Oil
¼ cup fresh cut up herbs (choice of Basil, Rosemary, Parsley, Oregano)
2 teaspoons salt
4 cloves of chopped garlic

Directions:
Mix lemon juice, oil, herbs, salt and garlic in bowl, this is your marinade. Place chicken evenly around pan with skin-side up, pour marinade over the chicken (I use gloves and try to stuff some marinade under the skin). You can also slice 1 squeezed lemon and put around the pan for extra flavor.  Bake uncovered at 400 degrees for 1 hour.

Tips:

  • You do not need to rinse chicken before baking, to make it easy cleanup use a large disposable pan and gloves (see past post about gloves and washing chicken)
  • Best way to easily squeeze lemons is to cut them in half and throw in microwave for 30 seconds, the lemon will be easier to squeeze when warm.
  • If you like a crispy skin, broil the chicken the last 5 minutes until skin had browned.
  • Serve the sauce on the side as a gravy.

Tip When Cooking Chicken/Turkey (Poultry)

TIP… as many of you have been contacting me that you’re going to be making the Honey-Mustard Chicken this week I wanted to give you a very useful tip when making any chicken/turkey dish. I always use disposable gloves from Costco (photo above) when handling raw chicken or turkey and you absolutely do not need to rinse raw poultry before cooking, that is just a myth. Rinsing poultry only spreads bacteria and the chance of salmonella into your sink.

Easiest (and Best) Old-Fashioned Brisket Recipe

Ingredients:
4 pounds of beef brisket
1 package Lipton Onion Mix
1 bottle Heinz Chili Sauce
1 can Regular Coke plus 4 oz water
½ bottle 32 oz Ketchup
1 package sliced mushrooms (optional)

Directions:
Put brisket is disposable pain. Sprinkle onion mix over brisket, top with jar of chili sauce and ½ bottle ketchup. Add mushrooms and pour can of coke over everything. Bake COVERED 4 hours at 350 degrees.

Tips:
1) Keep fat on the brisket to flavor while cooking and trim off when finished and slicing.
2) Make sure to cut against the grain, butcher will show this to you (tip for all beef) or shred with a fork and will be pulled brisket
3) Do not use Diet Coke..only regular Coke
4) If you want extra sauce for gravy, you can add ½ cup water after 2 hours of cooking to bottom of the pan

Herbed Salmon

Herbed Salmon

Ingredients:
1 ½-2 Pounds boneless Salmon Filet
1 tsp Kosher Salt
1 tablespoon Brown Sugar
½ tsp Chili Powder
¼ cup Whole Foods Mediterranean Herb Marinade

Directions:
Mix together dry ingredients and rub on salmon. Pour marinade over salmon and bake at 375 uncovered for 20 minutes. That’s all..best salmon ever!

Tips:

  • If you are using skin-on salmon, spray pan with Pam so skin won’t stick to pan
  • If you can’t find the Whole Foods Marinade, use ¼ cup olive oil and a squirt of lemon juice
  • If you want this to look fancy, cut up some lemon slices and serve on the side
  • If after 20 minutes your timer beeps that the salmon is ready to come out of the oven and at the same time you hear your kids screaming in the basement that your youngest is peeing on the carpet, you screw the peeing situation and you take the salmon OUT of the oven…no matter what, you don’t overcook salmon!

Honey-Mustard Chicken

Ingredients:

¾ cup honey
¼ cup Dijon mustard
¼ cup olive oil
1 tablespoon curry powder
1 teaspoon salt

Directions:
Mix oil, honey, mustard, curry and salt in disposable pan. Add chicken to the pan and spread honey mustard mixture all over the chicken. Place chicken evenly around pan with skin-side up. Bake uncovered at 400 degrees for 1 hour.

Tips:

  • If you don’t want to make this because you don’t like curry, I promise you will still love this! Friends who were resistant to try this because of the curry now make this dish weekly for their family!
  • If you like a crispy skin, broil the chicken the last 5 minutes until skin has browned.
  • Serve the sauce on the side as a gravy.
